Pretty delicious ...


The Food Pyramid suggests 3 to 5 servings of vegetables each day. One serving of vegetables can be:

1 cup of raw leafy vegetables
1/2 cup of other vegetables, cooked or raw
3/4 cup of vegetable juice

I like to gather a mix of colors, saute with olive oil, add shredded ginger, a pinch of cayenne pepper and 3 or 4 cloves of garlic.

Easy, energizing, pretty and delicious!

Homemade Taco Seasoning

One of my favorite blogs for healthy, fun recipes is The Cheap Gourmet. Give this tasty seasoning a try. It is full of the right stuff to get your blood circulating and your energy pumping. I'll explain why tomorrow.

Super Easy Homemade Taco Seasoning
Yield: 1.25 ounces Prep Time: 10 minutes

2 teaspoons Adobo Seasoning
1 teaspoon Kosher salt
1 teaspoon Black Pepper,
freshly ground1 teaspoon Cayenne pepper
1 teaspoon Paprika1 Cowhorn*
Pepper, minced

Mix all ingredients together. Add to one-pound ground beef, turkey or chicken (cooked and drained). Add 2/3-cup water to meat.Bring to a quick boil, than simmer over low heat for 10 minutes.

You can double, triple or even quadruple this recipe and store in an airtight container. If storing, do not include the Cowhorn pepper. You'll need to add that at the time of use.

Poof! All gone ... until I want it back.

Sometimes you just have to make things all gone.

I moved into our new home the end of May. Somehow, believe it or not, most of the rooms still have one or two unfinished projects hanging out.

In the bedroom there is the unhung painting of lovebirds. In the living room my doll collection awaits a display box, posters wait for frames and ... In the dinette an army of little nick knacks litter the window sills.

I'll stop now before I totally stress you out too.

Unfinished projects are a part of life and so is choice. Today I chose to put these bits and bobs into a big plastic bin that slides so nicely under a table. Poof! Just like magic the "to dos" fade back, the guilt is gone and I am enjoying the house more.

What do you need to pack or bag? Give yourself permission to not be perfect today or tomorrow or this month.

Walk Away & Hold It!

Walk Away.

Is a toxic relationship sucking you dry?You don't have to stay - you can, literally, walk away.

Often the simplest solutions are completely overlooked.

And, those Energy Vampires can cross the line - phone line that is. The phone version of the Walk Away maneuver is called Hold It!

It's simple. Just ask them to "Hold It." Push that hold button & take a break. Take the time you need to collect your thoughts, breathe deeply and relax. Then, when you are ready, get back on the line and handle the situation calmly.

Feeling victimized is exhausting. Remember - YOU have choices. Use them!

Tuna Fish PLUS Anti-Oxidants. Yum.

I have simple tastes, comfort tastes. Tuna Fish sandwiches bring back memories of me and mom - I can close my eyes and see her piling tuna fish atop a saltine cracker. This little meal was invariably topped off with a couple peanut butter or jam crackers.

I had an urge to update and eat this fav today. Here goes ...

Mom's Tuna Fish Sandwich Mine!

Can of Tuna fish Can of Tuna fish
Mayonnaise - Deleted - Used Plain, Low fat "Active Culture Yogurt"
Sandwich bread or saltine crackers Whole wheat sandwich wrap


ADDED: 1 Celery Stock, 1 Diced Carrot, 1/2 Diced "Sweet" Onion & 1 Garlic Clove
2 TBSP Parsley
1 TBSP of the marjoram spice

Notes
: The plain yogurt is less caloric and the "active cultures" promote the growth of healthy bacteria in your colon & boosts immunity; the celery stock, carrots and onion add fiber which helps digestion and keep your colon healthy; the sweet onion contains quercetin a powerful anti-oxidant (see below); Garlic is another super anti-oxidant; Parsley is an excellent source of vitamin A, vitamin C, and vitamin K. It is also a good source of iron and ... an anti-oxidant! Finally, the spice Marjoram (or lemon balm, ginger and cumin spices) dramatically up the anti-oxidant value of any meal.

Now - about all these anti-oxidants. Bottom-line - Antioxidants help prevent cellular damage, cellular aging and dis-ease.

Gotta love that! Yum.

Teamwork - Who is on your team?

If we were meant to go it alone, we'd be alone. Instead we share this space called Earth with millions and millions ...

My point is - get support from those "in the know" IF you want to feel better - FAST.

Last week I added a personal trainer to my team. My gym offered a free health evaluation and 3 free sessions. It took me a year to take them up on this offer. Why? Because I am used to going it alone. Asking for help showed weakness. (Where did I pick up that energy sucking attitude?)

Long story short - now I know which machines to use and I have a "plan" to build my strength, bones, curves - you name it.

And I found out that I am in EXCELLENT physical shape!

Two years ago I could barely get off a couch or walk - stroll for half and hour. I was tired all the time and slept as much as I could. Little by little - habit by habit - I have rebuilt my mind, body and spirit. That exam was a great validation.

I am not bragging. I am encouraging you to keep chipping away whatever is dragging you down and to keep on trucking, learning, asking and growing until you get your miracle health ...

Progress not perfection.

Start somewhere.

Me, I keep working my way towards the "ultimate" cleanse.

Ultimate to me means I have brought all the right foods and liquids. I have laid out a plan to follow and all systems are GO.

But in between now and that fabulous future is today.

Today I will plump up my chicken salad by adding in chopped cucumbers, squash, chives and apples. I will sprinkle in a couple TBSP of flax and wheat germ. Tonight we will eat a simple lean steak with a big salad side. Why? Because I got to start somewhere (no fast food, nothing white and no dairy) to start something.

Kudos to Michael Moore & Mike Huckabee

Kudos to Michael Moore & Mike Huckabee for bringing the topic of "self-health" to the American Public. This is a discussion we need to have and NOW is as good a time as any.

Now for individual Kudos -- First to Michael Moore for suggesting:

1. We would have better medical care in Cuba then we do in the U.S. and that

2. We should pour time and money into creating a Cuba-like socialized medicine machine.

SICKO reminds me to keep eating better, getting more exercise, stretching at night, drinking 8 glasses of water a day, cutting back on sugar, elimination "white" and educating myself on health and nutrition. It drives me to nag (oops! encourage) my husband to do the same. I don't want to be a part of his system.

Then kudos to to Mike Huckabee for having the guts to STATE that health is OUR responsibility and not something that will be fixed "if only" we had better medical care.

Don't get me wrong. I Love - I value and am grateful to a number of doctors who helped me, saved my mother and brother's lives, etc.

However I've spent years looking for solutions to unsolvable chronic conditions including asthma, migraine headaches, candida and, of course, chronic fatigue. If there was a pill I could have popped to solve any of these I would have done it BUT having to find, feel, work and research my way back to health made me a stronger, healthier person. Had I waited on congress - on the "system" I would be dead by now or, at least, a Sicko.

Michael Moore has millions and billions of $$$. He can afford the best health care. He can even fly to Cuba to get more. So, obviously great health isn't for sale. It is about the little, daily habits and actions we take to better ourselves. All the kings horses won't fix what we tear down if we aren't willing to do the footwork ...

Don't count on a government program to heal you. Don't wait for something or someone "out there" to change your chronic health condition. Be the change you need.

Mike Huckabee gets my vote. I am even going to send him a campaign contribution and a free copy of my Fatigue Be Gone! Guide. (Do you have yours?)

Make that call - Taking action is the ultimate energy boost!

Who do you know could be helping you feel GREAT but, for whatever reason, you keep putting off making that call and scheduling that appointment?

I'll share! For me it was the trainer at my gym.

For the past year I have duly noted the offer of a "Free Assessment" and 3 free training appointments. Instead of taking advantage of this fabulous offer I have been p-r-o-c-r-a-s-t-i-n-a-t-i-n-g.

One of my favorite excuses is that I am not in good enough shape. This is like not hiring a "Merry Maid" because the house isn't clean enough. (I have a girlfriend doing THAT one!) Another is that the trainers are too young and won't be able to relate to me. (Like I'm ancient?! Where did that come from!)

Enough of the excuses! 5 minutes ago I marched into my office and made that call. My first appointment is next Tuesday at 6:00 a.m. with Troy. Troy -- that's my father's name -- must be a good sign! And, you know what? I got such a rush of energy when I hung up that phone. Positive action is the ultimate energy boost!

Energy Boost Recipes -- Mom's Meatloaf

I don't about you but I do not have the time or energy to start all over from scratch in the kitchen. Then it came to me - I don't have to!

In brief - I need to add more fiber - more fruit - more veggies into our diet without driving me - she who does all the shopping, cooking and prep- insane. Then it hit me - why don't I add more of the good stuff into what we are already eating & enjoying ...

Here is my first concoction! My mother's favorite Meatloaf Recipe -- then and now.

* Then * * NOW *
1 lb lean hamburger
1 or 2 eggs
big slush ketchup substituted with an herbed salsa
1 cup corn flakes
big slush milk deleted - no dairy on this cleanse!
fine chopped onions & garlic added extra garlic + 1 cup of chopped zucchini + fresh corn off the cob + 2 TBSP Flax Seed
salt & pepper to taste
top with a coat of ketchup topped with the salsa + 2 TBSP wheat germ

cook about 1 hour @ 350

What's bugging you?

Me - I have a list. Most of the things on it are ALMOST, but not quite done.

So, guess what? I just read an article that connected the dots between fatigue and dangling "to dos" aka the pebble in the shoe that makes walking miserable!

Now, if I could just find where I filed it I would tell you exactly what it said and have one less incomplete dancing in my mind. Guess I will have to settle for letting go. This is, after all, one form of completion.
